Taco Soup is a weeknight crowd-pleaser that uses the spices that you have hanging in your pantry. A few cans of beans, tomatoes, corn, and a pound of ground meat come together for a quick and filling dinner.

Ingredients

  • 1 lb lean ground beef or ground turkey
  • 1 sweet onion
  • 4 cloves garlic (or 2 tsp garlic powder)
  • 4 tsp chili powder
  • 2 tsp cumin
  • 2 tsp salt
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp ground black pepper
  • 28 oz can crushed tomatoes
  • 4 oz can green chiles
  • 15 oz can kidney beans (rinsed and drained)
  • 15 oz can black beans (rinsed and drained)
  • 17 oz can corn (drained)
  • 2 cups beef broth
  • 1 avocado (optional, for garnish)
  • 1/2 cups crushed tortilla chips  (optional, for garnish)
  • 1/2 cups sour cream (optional, for garnish)

Process

  1. Heat a large soup pot over medium heat. Brown the meat and remove any grease, if needed. Add onion, cooking until soft. Add remaining ingredients and stir to combine.

  2. Bring to a low boil, then reduce heat, cover and simmer for 20 minutes, stirring occasionally, before serving. Garnish with desired toppings.
